Duck Liver Pate


Ingredients
1 Tablespoon Duck Fat, Liver from 2 Ducks,4 Tablespoons Cream' 1/2 Clove Garlic, 1 oz Butter Chilled, 4 Tablespoons Port, Salt and Pepper.

Method
Melt Duck fat, fry livers gently until brown outside and still pink inside.

Put into blender. Add port, garlic and cream to pan, heat gently. Add to livers in blender. Blend and add butter in small pieces. Add salt and pepper to taste.

Put into small pot and chill. Serve with melba toast.
