Recipes That Can Be Made From 2 Ducks

Duck Breasts with Apples and Mint


Ingredients
4 Duck Breasts, 2 Eating Apples with Skin, Cored and Thickly Sliced, 2 ozs White Wine, 2 Fluid ozs Duck Stock, 2 Fluid ozs Cream, 1 Sprig Mint, 1 Tablespoon Chopped Parsley, Salt and Pepper.

Method
Heat heavy frying pan without oil. Place Duck breast skin side down and fry for 5 mins. Turn and fry for 4 mins on meat side. Remove from pan and place on grid in roasting tin. Roast in hot oven for 40 mins.

Meanwhile remove all but 3 tablespoons of fat from frying pan. Add apple slices and brown on both sides. Arrange on serving plate and keep warm. Add wine, mint and stock to pan. Boil to reduce.

Take Duck breasts out of oven and slice thickly, arrange with apple slices and pour over sauce. Sprinkle with parsley.
