Marinated Duck Breast with Seasonal Salad

Preparation Time: 2hrs to Marinate 30 Mins to Cook

Ingredients
2 Silver Hill Duck Breasts
1 Tablespoon Honey
3 Tablespoon Thick Soy Sauce
Pinch Chopped Garlic
Teaspoon Chopped Ginger
1 Teaspoon Olive Oil
Small Knob Butter

Salad
Selection of Greens
(available prepared from most retail stores)
Balsamic Vinegar (just a splash)
1 Yellow Pepper (sliced thinly)
Pinch Sesame Seeds
1 Small Red Chilli (sliced thinly)
1 Dessert Spoon Wholegrain Mustard

Method

  1. Slice the duck breasts width ways and add to the honey and soy sauce and leave to rest for two hours.
  2. Place the olive oil in a wok or deep frying pan, bring this to temperature and fry the garlic and ginger.
  3. When the garlic and ginger are cooked add the small knob of butter and then the sliced duck breast, gently fry and continuously turn.
  4. Continue to fry until the duck is nice and dark and crispy.
  5. Remove the duck from the pan and keep warm.
  6. Now add a splash of balsamic vinegar to the pan and gently whisk in the wholegrain mustard, keeping it on the heat (this will be used for the dressing).
  7. In a bowl mix the peppers, chilli and salad greens together and season lightly.
  8. Once this is done mix in the warm duck breast and place directly onto a plate.
  9. Gently drizzle a small amount of the warm dressing over the salad and serve immediately.

Adding figs and wild mushrooms can turn this dish into a warming autumnal treat.

The addition of orange segments and strawberries creates the most wonderful taste explosions.
