Ingredients
2 Silver Hill Duck Breasts
1 Tablespoon Honey
3 Tablespoon Thick Soy Sauce
Pinch Chopped Garlic
Teaspoon Chopped Ginger
1 Teaspoon Olive Oil
Small Knob Butter
Salad
Selection of Greens
(available prepared from most retail stores)
Balsamic Vinegar (just a splash)
1 Yellow Pepper (sliced thinly)
Pinch Sesame Seeds
1 Small Red Chilli (sliced thinly)
1 Dessert Spoon Wholegrain Mustard
Method
- Slice the duck breasts width ways and add to the honey and soy sauce and leave to rest for two hours.
- Place the olive oil in a wok or deep frying pan, bring this to temperature and fry the garlic and ginger.
- When the garlic and ginger are cooked add the small knob of butter and then the sliced duck breast, gently fry and continuously turn.
- Continue to fry until the duck is nice and dark and crispy.
- Remove the duck from the pan and keep warm.
- Now add a splash of balsamic vinegar to the pan and gently whisk in the wholegrain mustard, keeping it on the heat (this will be used for the dressing).
- In a bowl mix the peppers, chilli and salad greens together and season lightly.
- Once this is done mix in the warm duck breast and place directly onto a plate.
- Gently drizzle a small amount of the warm dressing over the salad and serve immediately.

Chef's Tips
Adding figs and wild mushrooms can turn this dish into a warming autumnal treat.
The addition of orange segments and strawberries creates the most wonderful taste explosions.
Sauce Suggestion
Why not try a strawberry and balsamic vinaigrette or a tangy honey mustard dressing.
