Ingredients
3 Medium Sized Spring Onions
2.5cm Piece Fresh Ginger
1 Clove Garlic
1 Dessertspoon Soy Sauce
1 Dessertspoon Dry Sherry or Rice Wine
300mls Stock
Corn flour to thicken

Method
- Finely chop the spring onion, ginger and garlic.
- Gently fry in a little vegetable oil until soft.
- Add soy sauce, sherry and stock.
- Allow to simmer for 20 minutes.
- Thicken with corn flour in a little water to desired consistency.
- Serve with the duck portions on a bed of noodles with stir fried vegetables.
