Blackcurrant and Lime Sauce

Ingredients
200g Frozen Blackcurrants
100g Sugar
2 Limes
300ml Water
Corn Flour to Thicken

Method

  1. Place the blackcurrants, sugar and water into the sauce pan and bring to the boil.
  2. Add the lime juice and adjust the sauce flavour to suit taste. ie. more lime if you like it bitter or more sugar if you like it sweet.
  3. Thicken the sauce to the desired consistency by adding a little corn flour mixed with water.
  4. This sauce can be made well in advance and kept in the fridge for two weeks at least.
