Ingredients
400g or 2 large Desiree or Pontiac Potatoes
Sea salt
100g Silver Hill Pure Duck Fat

Method
- Preheat oven to 220°C. Peel the Desiree or Pontiac potatoes.
- Place potatoes in a large saucepan and pour over boiling water.
- Cook for six-eight minutes over medium heat.
- Drain.
- Return the potatoes to the pan place a lid on the pan and shake vigorously (this roughs up the surface).
- Season with sea salt.
- Heat the Silver Hill Duck Fat in a baking tray, add potatoes to the tray and roast, turning occasionally, for 40-50 minutes.
- Season with salt and serve immediately.
