Ingredients
4 whole carrots, peeled
½ Turnip, peeled
12 whole baby onions, peeled
4 Whole Parsnips, peeled
3 Tbsp balsamic vinegar
3 Tbsp Silver Hill Duck Fat
Sea salt
Black pepper

Method
- Chop all of the vegetables into 2 ½ cm dice
- In a large bowl, combine carrots, turnips, and onions.
- In a small bowl, whisk together vinegar, oil, salt and pepper,
- Pour over vegetables of choice and toss.
- Transfer vegetables to a large, deep roasting pan and spread in a single layer.
- Roast uncovered at 200°C/400°/Gas 6, for 45 minutes to one hour, turning the vegetables two to three times during the process.
