| Crispy Roast Whole Duck with 20 Chinese Pancakes and Hoi Sin Sauce
This duck is a wonderful meal to serve to the whole family or to bring to the table for a gathering of friends.
Reheat the duck in a hot oven for approx 35 minutes and leave to rest for 5 minutes, while steam-heating the pancakes and finely slicing some scallion and cucumber.
Shred the meat of the carcase and let each person make their own Peking duck by spreading the Hoi sin sauce on the pancake adding some scallion, cucumber and duck meat. Roll up the pancake and enjoy.
